We'll cover mixing & rolling doughs and lining tart pans.
Filling will include Fresh Fruit, Frangipane, Chocolate Custard and Quiche.

Quick Breads
Simple treats for breakfast and anytime.
Muffins, Scones, Pancakes and Breakfast Breads.

Sunday, May 20

Cake Basics
Learn some of the basic building blocks to putting together delicious layer cakes. Mixing, baking, filling and frosting. Vanilla and chocolate cakes with a variety of fillings and frostings including ganache, curd and buttercream.

Maximum of 6 people in each class.
Classes will be approximately 3 hours long.
Hands on instruction.
Take home the sweets you create along with the recipes.
$85 per class.

Cupcake Decorating Classes
Saturdays 9 am to 11 am

Come and learn how to decorate cupcakes. In each class you will learn how to hold a pastry bag, how to pipe and use tips for different decorations. You will also learn how to roll out and cut shapes with fondant. Each student will decorate 6 regular size cupcakes and 4 mini cupcakes and get to take them home.

Cost is $45 for each student/participant.

About Erica Leahy

Erica Leahy joined The Artist Baker last year. Before that, she spent the past 9 years studying and working in New York City. Her formal training began at Peter Kump's NY Cooking School (now the Institute of Culinary Education) followed by an internship at Daniel Boulud's Cafe Boulud and a pastry cook position at DB Bistro Moderne. Erica met Andrea Lekberg in 2002 when they both worked at Sweet Melissa's Patisserie in Brooklyn, NY. In 2003 Erica began working at Tom Colicchio's Craft under Karen DeMasco (James Beard award winning pastry chef). Over the next 6 years she became the pastry chef for 'Wich Craft, Craft Steak and finally Craft. Erica’s experience has focussed on simple, elegant desserts created with seasonal, locally produced products.
